Will using glass give me the same results as using a stainless steel bowl?
I always use very large restaurant stainless bowls when mixing large amounts. I rarely use glass. Stainless is best for whipping eggs and things that need to stay cold. There is no upside to using glass that I have found. Restaurant food (well some) tastes amazing and I guarentee they never use glass in the kitchen!!!
